Cracker Pizzas

Ingredients:

  • 4 large whole-wheat crackers

Version One: Veggie

  • 1 oz. feta cheese
  • Fresh spinach leaves
  • 1/2 tomato, sliced
  • 2 tsp. sesame seeds

Version Two: Tuna Melt

  • 1 oz. cheddar cheese, sliced into 4 thin pieces
  • 1/2 can tuna, drained
  • 4 Tbsp. cooked sweet corn

Version Three: Dessert

  • 1 oz. cheddar cheese, sliced into 4 thin pieces
  • 1/2 apple, thinly sliced
  • Cinnamon

Directions

  • If using, preheat the oven to 300°F.
  • If cooking in the oven, lay out 4 crackers on a baking sheet covered in non-stick paper. If microwaving, place the crackers on a microwave-safe plate.
  • Lay cheese on top of crackers first if using cheddar, and then lay other ingredients on top of the cheese. If using feta cheese, place other ingredients on first, then crumble the feta over the top.
  • Place baking sheet in oven for 5 minutes, or until cheese is melted. If microwaving, cook for 20 seconds on high.
