Ingredients
- 1 Lb. boneless, skinless chicken breasts
- 1 15 oz can diced tomatoes
- 1 4 oz can diced green chili peppers
- 1 medium onion, sliced
- 1 green bell pepper, sliced
- 2 Tbsp vegetable, coconut, or olive oil
- 2 tsp chili powder
- 2 tsp cumin
- ½ tsp garlic powder
- ½ tsp dried oregano
- ¼ tsp salt
serves 4-6
Directions
Preheat oven to 400° F. and grease a 9×13 baking dish. In a small bowl, combine oil and spices. Mix together chicken, tomatoes, chilies, peppers, & onions in a large bowl. Cover the chicken with the spice mix and toss until coated and pour into coated baking dish. Bake uncovered for 20-25 minutes or until chicken is cooked through. You can serve as a salad topping or in tortilla wraps. The world is your oyster.
