If your chocolate craving is as real as ours, look no further. We’ve got a simple, quick, and seriously healthy brownie recipe that only requires three ingredients. It’s so easy, you could whip them up before your night class, and the chewy factor is unreal. Oh, and they just so happen to be vegan. Check out the recipe below.
- 2 large, overripe, squishy bananas (look for lots of brown spots on the peel)
- 1/3 cup almond butter (or any kind of nut or seed butter)
- 1/4 cup unsweetened cocoa powder
- Optional: Add-ins such as chocolate chips, unsweetened coconut flakes, nuts, etc.
- Heat oven to 350° F.
- Grease a regular-sized muffin tin.
- Throw all of the ingredients in a blender and blend until smooth. No blender? Mash up the banana with a fork and stir in the almond butter, then the cocoa powder, until combined. It’s OK if the banana is a little lumpy.
- If you have any add-ins, now’s the time to throw them in. Stir to incorporate.
- Carefully divide batter evenly into 6 muffin cups and smooth out the top of each.
- Bake for 14–18 minutes, until firmly set on the edges and barely set in the center.
- Let cool completely.
- Sprinkle with cocoa powder and any other toppings you desire, and enjoy!
Recipe review
Maggie S. is a third-year undergraduate at the University of Nebraska-Lincoln.
“I can go all day eating healthy foods, but then I get hit with sugar cravings at night and overdo it on sweets. This dessert takes less than half an hour from start to cleanup, and it’s a healthier option than most sweets. With just three ingredients, it’s easy to make in your dorm or apartment. I made a plain batch, and then sprinkled the next batch with walnuts and raspberries before baking them (those were my favorite!).”
Cost
“$19.92 got me four bananas, one can of cocoa powder, one jar of almond butter, plus one bag of walnuts and two boxes of raspberries (the last two are optional). I made two batches, so 12 brownie bites. While the walnuts, almond butter, and cocoa powder would last for two or three more batches, this cost is more expensive than other desserts, like box-mix brownies, though it includes fresh fruit. You can also cut costs by swapping peanut butter for the almond butter.”
Convenience
“This recipe was quick and simple. The only step that took a while was waiting a couple of days for the bananas to ripen, but actual prep (measuring and blending the ingredients) took just five minutes! Also, I like that you can make a batch when you have time and freeze them for later.”
Taste
“Since there are only three ingredients, the flavors were strong—you need to really like bananas, almond butter, and cocoa to enjoy these. The texture is dense but spongy, not quite your typical sugar-laden brownie. That being said, the size and sweetness would be perfect to curb late-night sweet-tooth cravings in a healthier way. If you’re looking for a healthier alternative, these brownie bites are pretty effortless. I’d make the ‘batter’ again for dipping fruit or graham crackers!”
