It’s that time of year where nature provides an abundance of delicious fruit. What better way to celebrate than to choose your favorites and mix them together for this honey-lime fruit salad? This salad is perfect for picnics, summer barbecues, parties, or just to keep in your fridge and eat when you choose.

Fruit of your choice, such as:

  • 1 pound strawberries (diced)
  • 1 pound pineapple (diced)
  • 12 ounces red grapes (halved and diced)
  • 4 kiwi (diced)
  • 2 blood oranges (or regular oranges)

Other options:

  • 12 ounces blueberries
  • 15-ounce can mandarin oranges in juice, drained well and sliced into halves
  • 2 ripe bananas

For the dressing

  • 1/4 cup honey
  • 2 teaspoons lime zest (from 2 limes)
  • 1 tablespoon lime juice
  1. Gather and dice your desired fruit.
  2. In a small bowl, whisk together dressing ingredients.
  3. In a large bowl, combine diced fruit with dressing and stir until fruit is coated. Stir again before serving.

This honey-lime fruit salad is perfect for a healthy, sweet snack at home or as a side dish to bring to an event. This recipe makes an ample amount for one person. My suggestion? Freeze any leftovers that you can’t finish and then you’ll have the perfect smoothie for another day!

I spent about $13.00 on the ingredients and it should last me several days. Plus, I plan to freeze some of it for smoothies. I think this is practical for students and cost-effective.

This recipe was simple to make and only required a good knife, a cutting board, a bowl, and some measuring spoons. The recipe does require lime zest, which is difficult to get without a zester or cheese grater, but if you have the patience to produce the zest with a knife…more props to you!

I would absolutely make this fruit salad again. The lime juice gives it a subtle pizzazz and offsets the sweetness of the fruits. However, I don’t think the two teaspoons of lime zest were completely necessary. Next time I won’t add that. This is a great way to fill up on something sweet without overdoing it on dessert.
